Emulsification Test

The beaker on the left shows alkaline water that has effectively emulsified with olive oil this can only happen when the molecular size of the water has a micro cluster of 5-6 molecules.

 

The beaker on the right shows normal tap water with olive oil sitting on top, this is because the micro cluster size of tap water is larger and is unable to emulsify with olive oil.
